Job Description:

POSITION PURPOSE:  Set up, operate, and control all equipment systems that are required to produce good pasta. This includes ingredient blending, flour tanker unloading, process water temperature control, cooling water controls, vacuum and boiler systems gauge and thermometer readings, dryer temperature and Humidity controls, and delivery of the pasta to the designated destination.  Control of the equipment within parameters requiring a minimum hourly check of all major indices, including gauges, moisture content readings, drying controls and computer trend data systems, all with the aim of reacting to the data in a correct direction. Management of the WIP receiving system including selecting bin destinations and predicting bin availability, up to and including emptying pasta bins.   

ESSENTIAL DUTIES AND RESPONSIBILITIES including but not limited to the following:

  • Support Safety efforts and contribute to Safety Awareness on a daily basis. Report safety incidents in a timely   manner.
  • Actively participate in maintaining a “Food Safe” environment for our ST Specialty Foods and our “Customers”.
  • Follow Good Manufacturing Practices and Food Safety Guidelines.
  • Input of SAP orders and receivables from incoming flour tankers as well as process orders for pasta production.
  • Reviewing and understanding the production schedule and pasta making needs for packaging lines.  Pasta availability at the right destination and good quality required for this area.
  • Set up, operate, and control all equipment that produces good pasta. React to the data to control the processes within parameters and according to production recipes.
  • Review, record and move, as appropriate, pasta to required destination bins and /or packaging line or storage locations including bagging pasta in super-sacks when needed ensuring proper location tracking of product.
  • Unloading of tanker trucks as required.
  • Record production data from lines and ancillary equipment systems hourly.
  • SAP and Zontec systems. Upload data as required.
  • Recording of hourly data on the pasta production record sheets and the downtime logs.
  • Changing of dies to produce different shapes, importing production recipes, monitoring and correcting the process, washing and storing of dies, die rings and filters.
  • Maintain press area, platforms, die room and flour tailings area to a food grade standard
  • Testing of pasta exit moisture samples for moisture content as per specification requirements. Adjusting of set-point parameters as necessary to achieve correct production standards and ensuring that good pasta is produced.
  • Inspect pasta to evaluate quality by review of shape, size and color.
  • Take corrective action as required
  • Provide information on pasta location, type and quantity to Managers, Supervisors, Co-workers as required.
  • Perform other duties as required.

  • Mechanical logical understanding of processes
  • Ability to drive and operate a forklift and high lift.(requires training and certification)
  • Computer skills with Microsoft, Word, Excel and SAP

Experience: 1 year relevant manufacturing experience.  Food manufacturing experience preferred.
