Job Description:

Summary/Objective:  The Cutting Operator position is responsible for the safe, efficient operation of various cutting machinery needed to cut and prepare the finished dough for baking.

Essential Functions/Physical Demands: Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.

Run production properly according to the applicable schedule to obtain the correct dough for the process. Understand and complete process flow of each dough and each piece of equipment associated with the cutting process.  Make appropriate adjustments as necessary. Operate a dough dolly to move troughs from one work area to another as needed.  Must obtain dough dolly certification immediately. Correctly increase/decrease cracker weights and adjust topping weight on products that receive topping. Properly and correctly perform routine quality assurance check sheets and other paperwork within the required time frame and make appropriate adjustments when out of compliance. Understand dough characteristics including dry, wet, hot, and cold doughs and how each affect the cutter machinery. Accurately utilize a tachometer to confirm speeds of conveyors and rollers.  Masters understanding of cascade functions. Responsible for shutting down, starting up, slowing down, or speeding up the cutter machinery. Maintain the proper fill level and understand how the hopper fill level affects the process. Understand the root cause of blisters, fish eyes, and holes in the sheet. Understand the purpose of the cutter belt knives and the scraper. Operate the machinery to achieve proper cracker dimensions. Properly disassemble, clean, and re-assemble the cutter during a shutdown. Perform changeovers and troubleshoot the line without assistance. Must be able to train other team members on process/machinery as necessary. Correctly scan toppings using DSI scanners and record topping amounts in computer. Properly inspect rollers and belts for wear and notify supervision of noncompliance. Understand, observe, and comply with the handling/usage of color-coded container policy. Maintain clean, sanitary work environment and prepare work area for following shift personnel. Possess thorough understanding of all company policies, including GMPs and safety policies. Communicate effectively with other departments, managers, and other employees. Immediately notify maintenance, line operations or supervision of any repairs or adjustments required. If necessary to use powered industrial equipment, the employee must obtain certification to do so immediately. The employee may have to arrive earlier/later than normal when start-ups or changeovers to different products occur.  Check schedule regularly.

While performing the duties of this job, the employee is regularly required to talk and hear. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus. This position is very active and requires standing, walking, kneeling, twisting, holding, gripping, reaching, pulling, stooping, extensive bending, kneeling, crouching, crawling, extensive wrist movements, and climbing all day. Work can be performed in extreme heat and cold environments. Must possess manual dexterity necessary to operate equipment and handle product appropriately. The employee must frequently lift and/or move items weighing 50 pounds above shoulder level. The employee must be able to read, write, and comprehend the English language. The employee must work safely at all times and follow all OSHA (safety) guidelines.

Food Quality, Safety and Security:    The employee initiates action to prevent the occurrence of nonconformities relating to food safety and the quality of the product, processes, quality or safety system.  The employee stops production, if necessary, to correct food safety issues, quality issues, or safety problems.  The employee identifies and records any problems relating to food safety, quality of the product, processes, quality system or safety system.  The employee controls further processing or delivery of nonconforming product in terms of food safety or quality issues until the deficiency or unsatisfactory condition has been corrected.  The employee informs line supervisor, production manager, QA manager, or other management personnel of any food safety or quality issues or of any processes which become noncompliant with specified requirements.

Supervisory Responsibility:  This position has no supervisory responsibilities.

Work Environment:  While performing the duties of this job, the employee may be exposed to fumes or airborne particles, heat, cold, moving mechanical parts and vibration. The noise level in the work environment and job sites can be loud.

Position Type/Expected Hours of Work:  This is a full­-time position, with rotating days off lasting a minimum of 8 hours and a maximum of 12 hours in most circumstances.  The employee must be able to work overtime when required.

Travel:  No travel is expected for this position.

Required Education and Experience:   High school diploma/GED is required.

Preferred Education and Experience:   Two+ years of manufacturing experience is preferred.
