Job Description:

Specific Job Duties & Tasks:

Checking production schedule and verifying product is in running order. Checking, setting, operating and maintaining ovens according to standards. Checking, setting, operating and maintaining oven speed and temperatures according to standards. Performing start-up/shutdown procedures for ovens. Ensuring that cooling/oven room area is clean and organized. Conduct product/line/oven monitoring of all production lines in operation; recording measurements, weights, temperatures etc. Input data into computerized system. Assist in updating or implementing production and food safety aids such as guidelines, HACCP, GMP’s, etc. Maintain well-organized, detailed and legible records. Perform lab testing such as moisture readings, weights, sizing, sugars, bake tests, die counts.  Support operations management in problem resolution. Check/record digital band speed readout on oven PLC - every hour or as needed. Check/record digital dough machine speed readout, on dough machine PLC - every hour or as needed. Adjusting rollers at the end of the ovens according to products specs – as needed. Moisture checks - every hour or as needed- Note: another moisture check must be performed immediately. if the moisture reading is out of specifications, (too high or too low). Base cake color checks – constantly. Measurement of width & height Base cake   - start ups /change overs / any time when needed. Die counts - Monthly – on each line & shift and every time a different cookie die is used and /or when different flavor dough is used. Recognizing all dies for specific products. Check correct usage of die, formulas etc. for products   - constantly. Damper checks- once per shift. Reading, recording and adjusting oven temps according to specs as needed. Oven temperature checks - 8 times a shift or as needed. Oven temperature adjustments – as needed. Summit – all data in computer as needed. Cookie Temperature Readings – every hour at different locations of process or as needed. Oven room monitoring - of temperature and humidity every hour – as needed. Oven room monitoring – of belts, equipment, etc. as needed. Dough batch – checks – every time a new batch goes on the line. Practicing safe procedures related to the position. Conforming to all HACCP rules associated with the position. Following all Good Manufacturing Practices.

Physical demands:

  • Long periods of sitting/standing/walking
  • Lifting, pushing, and/or pulling up to 50 pounds occasionally.
  • Frequent typing and working with a personal computer.

Job Qualifications:

  • Familiarity with personal computers and Microsoft Office - Word and Excel
  • Excellent verbal and written communication skills required
  • Minimum of one year experience working in a food manufacturing environment and prior experience in a quality assurance role a plus
  • Demonstrated problem solving, decision making, and analytical skills required

SAFE QUALITY FOOD REQUIREMENTS

Ability to initiate action to prevent the occurrence of nonconformities relating to Food Safety and the Quality of the product, processes, quality system, or safety system.

Identify and record any problems relating to Food Safety and the Quality of the ingredients, processes, quality system, or safety system.

Controls further processing or delivery of nonconforming product in terms of Food Safety and Quality issues until the deficiency or unsatisfactory condition has been corrected.
